Ingredients

  • 3 cups blueberries

  • 1 tablespoon lemon juice

  • 2 tablespoons Keto Goods Allulose Syrup

  • 2 teaspoons vanilla extract

  • ¼ teaspoon xanthan gum

  • ⅔ cup almond flour

  • ⅓ cup coconut flour

  • ¼ cup low-carb sugar substitute add more if needed

  • 1 egg beaten

  • 6 tablespoons, butter-melted

Instructions

  • Preheat oven to 350.

  • Pour berries into a greased 9x9-inch baking dish or 9-inch pie pan.

  • Sprinkle with lemon juice and xanthan gum. Add the liquid allulose sweetener and vanilla extract to the blueberry filling.

  • In a mixing bowl, stir almond flour, coconut flour, ¼ cup granular sweetener and egg until the mixture resembles a coarse meal.

  • Sprinkle the dry mixture over the blueberry mixture.

  • Drizzle melted butter over the topping.

  • Bake at 350 degrees for 25 minutes or until top is golden brown.
